Well, I went to scope out the Wurstfest today and ended up getting there too early. (It opened at 4:00 PM and I got there around 3:30.) When it finally did open, I learned that the music and entertainment would not even be starting until 6:00 PM, so I just got a sausage on a stick, then headed back home. The good news is that the Fest runs for the next ten days, so maybe I'll try and catch it on a weeknight when there's less of a crowd. (Tonight will be packed, because opening day is free.)

If i where there, i would keep a good supply of tums, rolaids, Xantax, nexium and lipitor and maybe even a large bottle of pepto..

Sausage in general, does not give me much of a gastronimical problem. What's really good, but really bad are Louisiana Hot Links. Taste so good, but contain a lot of grease, gristle and who knows what else. (Well, one 'what else' is plenty of cayenne pepper.) Still, I'll never refuse a Hot Link, if offered one.
As Sam Houston says in THE ALAMO (2004), "If it doesn't burn going down, how are you supposed to know it's bad for you?"

guess the PA Dutch scrapple is the same thing. when i asked an amish waitress what it was she replied this phrase exactly, 'When we butcher the animal, whats ever left over and not edible by itself, we grind it up and deep fry it."

Did you try some scrapple? It probably would not kill you.
Each to his own taste, I reckon. My Grandpa used to like calf's brains and scrambled eggs. All of us kids shuddered at the thought, but he just loved it.
I happen to enjoy the Mexican dish, menudo, which is a peppery tripe and hominy soup. Many Anglos---and Americanized Mexican kids--- won't touch the stuff.

What about posole? It's essentially the same thing, only you substitute pork roast for the tripe.

Yeah, it's great. Hominy, onions, tomatoes and pork meat. Kinda peppery. For toppers, you have the option of sprinkling on some oregeno, diced green onions, shredded cabbage,and diced chilis. A squeeze of lime, or lemon is also an option. Served with steam rice on the side, along with a stack of fresh steamed corn tortillas and you have a meal.

I never heard of extra-sharp cheddar in posole, but why not?
For me, extra-sharp cheddar is especially good melted over frijoles, tortilla chips...just about anything, really. Of course, there's nothing quite like a tart, crisp apple with a few slices of cheddar on the side. Call it "Instant Apple Pie".

That's a similar situation to the scene in LONESOME DOVE, where Tommy Lee Jones and Robert Duval are trying to hire on a new cook in San Antonio. The old Mexican cook offers them up a basket of something and both Robert Duval and Tommy Lee try the dish. "What is it?" asks Tommy Lee. "Grasshoppers", replies the cook proudly, whereupon Tommy Lee spits out his mouthful, before saying, "I ain't eatin' no grasshoppers!" "Yeah," returns Robert Duval with a grin, as he continues eating, "but they're kinda tasty!"
